The candlemaker’s workshop
The initial line makes an adventure through the sweet, fruitful, and fragrant scenery. Flavors of dried apple, golden syrup and festive fruit pudding play out with subtle touches of plum sauce and candied citrus. This adventure is continued at the palate, where there is the freeze-dried strawberries, orange oil in chocolate sauce, and apricots steeped in lapsang souchong tea. And, with water, a herbaceous garden is created with creamy fruit pastilles, runny orange curd, and beeswax-covered raisins, which brings about a multisensory experience that is pleasurable and complex.
Its charm is added by the background story: two bourbon hogsheads of single malt have been transferred to distinct casks, one being a first-fill American oak PX hogshead and the other a first-fill American oak oloroso hogshead. The union of these casks resulted in a cask strength expression with a lot of character, texture and depth, which was well balanced to take a complex tasting experience.

The old man and the sea
This Highland vernacular gives out the reserved, heathery peat smoke and forest mushrooms, sea freshness, and chilly waxy scents at the nose. Delicate whiffs of beach pebbles, gorse, heather honey, and menthol slowly come out to show a typical Orcadian personality. A grubbier peat profile is portrayed in the palate as chamois leather, boiler smoke, and bonfire embers which are covered with waxy texture. Water elicits creamy heather honey flavors which are more pronounced by peat smoke and flowers.
All the distillation on 08/12/2005, followed by maturation in refill ex-bourbon hogsheads, followed by further cask treatment with 12 years leads to an articulation of grace and sophistication. The blend of the ancient and noble notes conveys the art of balance and gives a solid, yet sophisticated experience to the sensitive taste.

The nose is met by this Highland expression with pickled dark fruits, bergamot, blood orange, and candied citrus peels. There are also notes of brown bread, treacle, and heather honey that are presented, which are close to depth and richness. Reduction makes the aromas light and brings about the funky flavors of custard creams and liquorice. Herbal extracts, medicinal tangs, and wood spice are offered by the palate and develop into marzipan, chocolate muffins, earthy tobacco, and sharp strawberry jam and water.
It was distilled on 31/07/2008 and aged 10 years in a bourbon hogshead, then transferred into a second-fill PX hogshead to add to the richness and layered texture. This style enables complex interaction of sweetness, spice and herbal complexity, and thus, it is a very persuasive Highland expression.
